    Listen to this. I combined vegan, freegan and Polish in one dish. I had some freegan peppers left in my fridge for some time and I didn’t hesitate to use them.\u00a0<\/p>\n

    Since Billy doesn’t really like peppers raw or even with lettuce, I reminded myself of my mothers’ famous peppers stuffed with rice and meat recipe. Its probably typical for all Polish mothers. In addition, I had some barley groats, which I bought in a Polish store in Reykjavik.\u00a0<\/p>\n

    Following my instincts, I ran to the supermarket looking for a nice vegan meat. We do not buy animal meat, it is a shame, and besides, we are fed up with it. I spotted an interesting soy-gluten substitute – Shredded hoisin duck by Linda Mccartney. Thus, I am starting a great test of vegan meats available in Iceland.\u00a0<\/p>\n

    So there it is:\u00a0<\/p>\n

    1. I cut 2 peppers in half, picked out the seeds. Additionally, I had one oblong red pepper, so I hollowed it out as well. It\u00a0created even a more interesting form of paprika canelloni. I greased them gently with oil and put them for 15 minutes in an oven preheated to 200 degrees.\u00a0<\/span><\/p>\n

    2. I combined the cooked barley groats with garlic and ginger on a hot pan – healthy mix, pulled, vegan duck, leek (freegan) and fresh parsley.\u00a0<\/span><\/p>\n

    3. With this stuffing I carelessly filled the previously baked peppers and sprinkled them with white cottage cheese. Not a necessary addition, but the Polish store also touched my heart with this product.\u00a0<\/span><\/p>\n

    4. Bake the peppers loaded with grits in the oven, preferably on a baking tray lined with paper for another 15 minutes, at the same temperature. Enjoy your meal!\u00a0<\/span><\/p>\n

    We ate it with Polish pickled cucumber, grated beetroots, lettuce and hummus. I rate the vegan substitute itself four with a plus. Well-preseasoned, good for lazy or busy people. For those of you out there who are more ambitious I am gonna continue my search of perfect vegan meat.
